The grape variety
is a ‘white berry’ grape called 'Bombino Bianco' (little
white bomb). The first thing to strike you about this wine is its
name: farmers managed to pay all the debts they accumulated during
the year with this wine, thanks to its very resistant and fertile
vine which can stand up to any weather conditions. In fact, when
deals were made by spoken promise, they were called 'Pagadett'.

In Romagna this vine is cultivated on the hillside, especially
in the Cesena and Forlì area, with limited production,
favouring a higher alcoholic content and decidedly more body.
The colour of Pagadebit is straw yellow with slight green reflexes
when held up to the light and its bouquet reminds you of flowers.
At times it reaches the quality of Albana, especially when
it is fruitier and compliments the almond taste.
The various types of Pagadebit are (denominations):
- Pagadebit of Forlì - I.G.T.
- Pagadebit of Romagna - D.O.C.
- Pagadebit of Romagna - D.O.C. - 'sottozona Bertinoro' (Bertinoro
area)
- Pagadebit of Romagna - D.O.C. Frizzante (sparkling)
It is a suitable accompaniment to minestrone, creamy soups,
fish pasta and risottos and the traditional 'Passatelli'. For
main courses, it is served with white meat, grilled fish, frogs,
snails and vegetable omlettes.
