STROZZAPRETI Strozzapreti are a very poor type of pasta exclusively prepared with flour and water,quick to prepare because it does not require any tools.
The origin of the name is uncertain and may derive as from the strength of the mixture as from the irony based on the traditional anticlericalsm typical of the area historically dominated by the Papal States.
The mixture, after being allowed to stand in a cool place, it is pulled in a not too thin phyllo dough, from which come the strips that are one by one hand rolled and then switch between the palms of your hands until you create a kind of fusilli.
They are traditionally eaten with meat or vegetables sauce.
